Recipe Idea:
Strawberry Vanilla Bean Olive Oil Cake
Ingredients:
· 1/4 cup unsalted butter, softened
· 1 cup Tasteful Additions Vanilla Bean Olive Oil
· 3 eggs
· 1 tsp vanilla
· ½ cup yogurt
· ¾ cup milk
· 1 tbsp lemon zest
· ¼ cup sugar
· 3 cups flour
· ½ tsp baking soda
· 1 tsp baking powder
· ½ tsp salt
· 1/2 cup strawberry jam
Directions:
1. Preheat oven to 350.
2. In a mixing bowl mix together softened butter, olive oil, eggs, vanilla, yogurt, lemon zest and sugar.
3. In a separate bowl whisk together flour, baking soda, baking powder, and salt. Stir into wet mixture until combined. Slowly fold in jam until combined.
4. Pour into a greased 9×5 baking pan. Bake for 50 minutes or until a cake tester comes out clean. Cool in pan for 10 minutes. Remove to rack and cool completely.
5. Slice and spread with more jam!
Recipe Idea:
Vanilla Olive Oil Granola (top this on your favorite yogurt or just eat by the handful!)
Ingredients:
· 3 cups rolled oats
· 1 cup sliced almonds
· ½ cup honey
· ½ cup Tasteful Additions Vanilla Bean Olive Oil
· ¼ cup brown sugar
· kosher salt
· 1 cup dried cherries
Directions:
1. Preheat oven to 300°.
2. Toss together the rolled oats, almonds, honey, oil, sugar, and ½ teaspoon salt.
3. Bake on a rimmed baking sheet, tossing occasionally, until golden, 35 to 40 minutes; let cool.
4. Mix in the dried cherries.
5. Store at room temperature for up to three weeks.
This granola works with an endless number of variations; Try hazelnuts and dried cranberries, pistachios and dried apricots or pumpkin seeds and raisins.
